Hi,
With visiting De Bierboom again here in Bruges, I tried their amazing flagship again.



Monachus XII at 12 vol%
Brewed according a fantastic recipe from Rudy Vossen at brewery Feniks by brewmaster Gino Vantieghem, formerly brewmaster at Liefmans!!









This is truely amazing stuff people.
A dark beer which is very soft, sweet, and so dense.
It's so remarkable that it also has that refreshing spiciness.
That greatly counter balances the heaviness with such a perfection.
Nosing is such a refreshing flowery perfumy experience, paired with caramel and roasty accents.
This beer flows so smooth and creamy.
I'm also very impressed with the foam and head stability. A very steady creamy head to be precise.
But be aware, this is a very dangerous drinkable beer  :drunken_smilie:

Truely a masterpiece IMHO.

It's not easy to brew a beer like that which is strong yet so drinkable. Well done!   t_u
